This sturdy Indian black tea is unfailingly full bodied but best known for its characteristic “malty” flavor and sweet aroma that sets Assam apart from all other black teas. This Assam Mangalam cultivar is rolled in such a way as to preserve the buds downiness and produce a flavor of honey and malt. Even purists should try this low-grown, orange-red to dark red tea with milk and sugar. Assam takes to milk better than any other black tea due to its high tannin content. Assam is also known to cause heartburn, so if this is a concern, try Royal Golden Yunnan instead.
ASSAM MANGALAM
1. Bring fresh, cold water to a rolling boil.
2. Swirl boiling water in the teapot or mug for 1 minute to warm it up, discard water.
3. For each cup of tea place 1 level teaspoon of tea leaves in the tea infuser.
4. Pour boiling water over tea leaves, cover and brew for 3 minutes.
5. Remove infuser and leaves, and serve.
6. Can be rebrewed several times, adding 1 additional minute to the brew time.
